Buns!


Just a quick entry to get things rolling again.  I decided it was finally time to show off my buns!  I am pretty proud of these babies.  You may remember them from this entry.  Born from a simple recipe on about.com, we haven't been disappointed yet.

 Burger/Patty Buns adapted from about.com
(These instructions are adapted from the notes I took on the recipe.)
1 c. warm soymilk
1 c. warm water
2 T. agave nectar (or other sweetener)
2 1/4 t. yeast
5-5 1/2 c. flour
1 1/2 t. salt
for tops: a little soymilk and sesame seeds (or sunflower ;)

1)  In a large mixing bowl combine the soymilk, water, agave and yeast.  Let stand several minutes.  In another bowl combine the flour and salt.  Add flour/salt (approx.1/2 cup at a time) until the dough comes together and pulls away from the sides of the bowl.  The dough should be soft, but not sticky or dry.  Knead until elastic, then place in a lightly oiled bowl, turning to coat.  Cover and allow to rise until doubled, approx. 1 hr.

2)  Preheat oven - 400 and line a baking sheet.

3)  Punch down the dough and divide into 12 rolls. Knead each on a dry surface until tight, then place on the baking sheet.  Let rolls rest for at least 5 min., then flatten slightly with your palm.  Cover loosely and allow to rise, 20 min. or until doubled.

4)  Mix a little soymilk with water and gently brush tops of buns.  Sprinkle with sesame seeds or other topping of your choice.  Bake for about 15 min. or until golden.

Welp! I know what I'm making.. :) My shipment of agave and soy milk is coming and I'll be ready to go.....I might add a little ground up flax as well......fun fun.....
