Black Bean Burgers and the big crumble

onight I made black bean burgers and fries.  I don't remember the last time we tried making black bean burgers, but I remember knowing I wanted to try a different recipe next time (we weren't very impressed).  For tonight's version I looked at a few sites, narrowed down from a search earlier this week (during a meals planning session) - Black  Bean Burgers 1, Black Bean Burgers 2 and Black Bean Burgers 3.  The flavor was pretty darn good, if I do say so (the boys agreed), but they were falling apart a little.  What could have helped?  Maybe chopping things a little finer or putting everything through the food processor.  Maybe less of the "chunky" ingredients.  Or perhaps letting the pan heat a little longer.  If anyone has suggestions from their perfected bb burgers please let me know!  The spice amounts are guesses from what I threw in, so use more or less depending on your tastes.


Black Bean Burgers
 3 c. black beans
   (cooked; or 1 1/2-2 cans)
3/4 c. mushrooms
1 onion
3/4 c. oats
   (I should have processed these a little)
2 tsp. garlic granules 
1 1/2 tsp. cumin
1 tsp. tamari
1/2 tsp. jalapeno pepper flakes

Mash beans, mix in all other ingredients, then fry 'em up in some olive oil.

French Fry Spices:  garlic, paprika, oregano, salt and pepper.
I threw on more paprika then planned and these were actually quite spicy due to the amount of paprika and pepper, a wonderful surprise :)

hey, stopping by your site for the first time, too. i love your b&s-reference name (if it's a b&s reference...)!

we frequently fail at frying bean burgers. i think the key is to either use tons of oil or no oil. something in between just doesn't seem to work. i like isa's idea of putting some oil in a spray bottle and then just coating the pan surface. i guess you could brush it on as well... either way, oil is the main culprit in my experience. these look good, though - hell, if they were put on my plate, i'd eat them!

That looks like a plate of total YUM! Maybe try adding a bit of wheat germ, just a bit--see if that helps in the stick-together department? And a bit of Egg Replacer? I have hit or misses all the time with vegan burgers.

Yep, it is a Belle & Sebastian reference ;) You're the first to notice actually! (My last name is Fox and it was a song on the first mix cd Adam made me)

I've been thinking that changing the amount of oil might help, too. It can be tricky! And I may have to try adding a binding agent next time. Thanks for the suggestions guys!

we always have trouble "sticking together" and propose the following possibilities. use some egg replacer (the powder you mix with water--it worked pretty well when we made latkes). form the patties and freeze, or at least thoroughly chill them before frying. use cooked oatmeal instead of ground up oats or rolled oats. that stuff can be pretty sticky...i have black beans in the freezer--i'll have to try some of my own advice. actually, probably ALL of it at once!!
