Grilled Avocado Sandwich

This is something for those quick dinner nights, when you're missing grilled cheese or want something a little greasy ;)  On the side I served up mashed potatoes (after boiling, peels were left on, I threw in some margarine and soymilk and mashed it up - leaving chunks of course!) and cauliflower poppers (from vegweb).  The gravy on the mashed potatoes was actually a packet we had from a Christmas gift.  We mixed in a little nutritional yeast with it to thicken and to help downplay the saltiness.
 
The sandwich is super easy.  Spread margarine on one side of two slices of bread (these will be the top and bottom of the sandwich, margarine side out).  Spread avocado on one slice of bread (for these we used 1/3 of a whole avocado), topped with minced garlic (or powdered/granulated) and a couple of tomato slices.  Add anything else you might want!  Warm up your skillet and toss these babies on.  They're done in no time!  

Another option: instead of spreading margarine on the bread slices, you can just add oil or margarine to the skillet.  But I've always preferred it this way ;)

My husband saw this picture as he walked past the computer and now he wants to go and get some advocadoes! He says this meal contains some of his favourite ingredients... Looks good to me, too!

Now that is an awesome idea! I was just craving something -like- a grilled cheese sandwich, but not quite, and couldn't figure it out. I'm absolutely making this one for lunch!

:) Yep, we love them, too! And garlic! Funny thing, the inspiration from this sandwich came from an old computer game Adam (the boyfriend) used to play (one of the Quest for Glory games). He was showing it to me once and asked if we could make the sandwich. It may have just been some kind of toasted garlic sandwich, so we added a few things to it. If you have tofutti cream cheese on hand it's good w/it, too. We just haven't bought that for awhile.

love avocados--good fat, great texture and flavor. but did you know they are way rich in FIBER? (just found this out this week) i mostly shop organic, but sometimes the budget says "choose" and even conventionally grown avocados are "clean". i load up at costco for CHEAP...good looking supper, cassie!

Yeah, I know, we actually started buying them organic anyway when we moved to Springfield because the cost isn't that much different and Dillon's avocados don't taste as good, for some reason. Not sure I knew they were so high in fiber, good to know! We love them...if only we could grow them! (Maybe an experiment for the future)

Quest for Glory was the inspiration for this sandwich! In the game the hero can pick up a garlic avocado sandwich, isn't that great?!

You know what's funny? You spread the margarine on the bread like mom, and I do it the other way, like dad. Maybe that sounds stupid, but I thought it was interesting.
